An apple a day keeps the doctor away… so why not try applesauce?

If you like apple pie, you’ll want to add this recipe to your collection. This versatile dish can be enjoyed as a breakfast meal, a side dish or even as a dessert.  When I make this for my family, it is usually completely gone before it even has time to cool!

Homemade Apple Sauce with Agave:

  • 8 medium apples, peeled and cored
  • 1/4 cup agave syrup (you can use sugar but agave is just as good and better for you!)
  • 2 tsp ground cinnamon
  • 1/2 cup water

Directions:
In a medium saucepan, add all ingredients. Bring to a boil. Reduce heat to low and simmer for 20 minutes. Once softened, mash apples with fork or potato masher. Serve warm or cold.

 

Who put me in charge of these people?

I’ve always been a girly girl.  You know, the kind of girl who likes to wear makeup, sport a funky nail color and get her hair done every six weeks. I like the color pink. A lot!  I don’t like violent movies (so loud). And I don’t like scary rides at the amusement park.

So how did I get here?  I am the mother of seven- and nine-year old boys.  You know, the kind of boys who think burping and the word “poop” are hysterical.  Boys who enjoy anything that explodes, shoots or makes a loud noise (particularly a noises that mimic a farting sound).  These are boys who will kick each other as the other is walking past, just because.

Who thought it was a good idea to pair me with these two creatures I call my sons?  Well, whoever it was (thank you, God), I can’t imagine being anything other than the mom of these two boys!  And for the last nine years, I’ve been working tirelessly at ensuring these little beings are living healthy lives — eating the right foods, staying physically active, listening in school, being nice and knowing how to handle life’s ups and downs.

This is my amusement park ride.  Only, this one I board willingly. This one, while scary and utterly dizzying, is also completely fulfilling and unbelievably fun. Riding this roller coaster is how I choose to spend my life.

And so this is my blog.  This is where I will share my challenges, successes, discoveries and moments of hilarity in my quest for a happy and healthy family and a happy and healthy me.
