1/2 cup frozen ground-beef-style soy crumbles (trust me, they’re good)
2 low carb Tortillas (medium)
1/2 cup shredded fat-free cheddar cheese
1 wedge The Laughing Cow cheese, Light Original Swiss
1 tpsp fat-free sour cream
1 tsp taco seasoning mix
Preheat oven to 350. Lightly spray a baking sheet with olive oil spray. In a microwave-safe bowl, combine soy crumbles, cheese wedge and taco seasoning. Microwave on high for 30 seconds. Remove and mix.
Wrap tortillas in moist paper towel and microwave for 30 seconds.
Place tortillas out flat on baking sheet. Spread soy mixture down the center of each tortilla. Roll and turn upside down so the open side is facing down. Lightly spray tortillas with olive oil spray.
Bake 15 minutes or until crispy. Serve with sour cream if desired.
