Chicken Salad Lettuce Wrap

 

 

 

 

 

Ingredients:
1 head of lettuce
3 cups (or 24 oz) diced cooked skinless chicken breast
1/4 cup sunflower seeds or diced pecans
1/4 cup dried fruit pieces
1 cup diced celery
1 cup low fat yogurt
1 tsp curry powder
1/2 tbsp wheat germ
Salt and pepper to taste

Separate leaves of lettuce from head. Rinse and dry thoroughly. Mix together all other ingredients. Spoon chicken mixture over a leaf of lettuce then fold over into a wrap. Repeat until mixture is gone.
